Since 2005, Olympia has embraced the Iron Rabbit Restaurant and Bar as its second dining room. And since 2005, we couldn’t be more proud to be your first choice for inspired, creative dining options. For the last several years we have happily strived to meet and exceed guest expectations by offering the friendly and familiar with a unique and unusual twist.
The fare is fresh and local. The burgers are the best in town, hand forged and full of flavor. The root beer is made right here in the restaurant. The bar boasts rotating craft beers, from European imports to neighborhood favorites. And the desserts? There’s a reason we list them on the front of the menu.

| About the Owner |
 Coupling a passion for food and drink with a passion for art and service, Christian Skillings has been the proud owner and operator of The Iron Rabbit Restaurant and Bar since 2005. Anyone who has ever wondered about the owner of this curious establishment need look no further than the restaurant itself, which boasts his values from wall to wall.
Indie film posters hang in the bar next to the latest craft beer specials, suggesting his favor for good drink and even better cinema. Bunnies peek from ledges and picture frames, a nod to his days of raising and showing rabbits as a kid at the Thurston County Fair. The warm color, the inviting ambience, the delicious aroma wafting in from the kitchen, even the assorted board games waiting on the antique trunk in the bar – they all reflect Christian’s passion for the perfect pairing of fine cuisine with a welcoming atmosphere.
Christian’s appreciation for fine art came in college, with a particular interest in sculpture. His love of art quickly fused with a newfound zeal for hospitality as a result of his experience managing establishments in the Gig Harbor and Silverdale area. Christian relocated back home to Olympia to be closer to family and to ultimately build the Iron Rabbit Restaurant and Bar, which has continued to develop and reflect Christian’s values over the years. When Christian isn’t brainstorming, tasting, educating the crew or having a chat with guests, he can be found at home with his beautiful wife, Oksana, and their brand new baby girl, Sophia.
